Most dieters -- no matter how well-intentioned -- underreport what they eat by as much as 40 percent, says nutritionist Charles Stuart Platkin. He recommends writing down everything you consume in a food diary -- or, for the most graphic evidence, snapping a photo with your camera-phone. It might be the only picture worth a thousand calories.
