Just split an English muffin, smother on marinara sauce and sprinkle with part-skim mozzarella cheese. Pop it in the toaster oven and enjoy! For an even healthier twist, try this exotic -- but easy -- fruit pizza. Blend eight ounces low-fat cream cheese, 1/3 cup sugar and 1/2 teaspoon vanilla in a mixing bowl; spread about one tablespoon of the mixture over each of six split English muffins. Divide the slices from two bananas to form the next layer; then divide four cups of fresh fruit over the bananas (try pineapples, blueberries and apricots). Fruit-tastic!
